Recipe- Crab Cakes

A Maryland favorite for sure, these Blue Crab Cakes are delish!

Last Sunday my husband and I hosted a cookout.  We had a ton of food left over, including over a dozen crabs. Leftover crabs=Crab Cakes!  If you aren’t from Maryland and have never picked crabs, had crab cakes, crab dip, or MD style cream of crab soup… you’re truly missing out.  In the time it took me to type the sentences above I stopped four times to think about food.

This was my first time making my own crab cakes.  I used a recipe given to me by Kaley @ A Tale of Three Poags, which I changed just slightly.  They came out great.  My only issue was that I added a little too much Worchestshire sauce… which was my fault and I’ll try not to get all crazy shaking the bottle next time.

This is my variation of the recipe..

You’ll need:
- 3 cups Freshly picked MD Blue Crab meat (no other will do)
- 12 Club Crackers
- 1 1/2 Tbsp Mayo
- 2 Tbsp Melted Butter
- 1 Egg
- 1 Tsp Mustard
- Dashes of: Worchestershire Sauce, Old Bay, Parsley, and Black Pepper

Before you start you need to pick crabs all night until you end up with about 3 cups of meat... OR if you live locally, you should also be able to buy fresh crab meat.

Step 1:   Preheat oven to 375 degrees.  Place crab meat into a medium bowl.

Step 2: Use a small food processor to crush the Club Crackers.

Step 3: Add the crushed crackers and all other ingredients to the bowl of crab meat.  Gently mix all ingredients together with a spatula.

Step 4:  Once the ingredients are mixed well, you should end up with a giant crab ball.  Divide mixture into four equal parts.  Place the four crab cakes into a baking dish that has been coated with cooking spray.

Step 5: Place in preheated oven, bake for 30 minutes.  Enjoy!

#45- Try a new restaurant

Last night, hubby and I met up with friends, the Poags!, and tried a new Hibachi restaurant in town.  The restaurant is not actually new.. it's been there for nearly a year probably.  It was delicious.  I nearly had to be rolled to the car.  Hibachi, buffet, sushi, dessert- oh my!

The only picture we got of the whole evening was the boys looking at the water fountain.  Cute!

Her son, Cormac, was diagnosed with a tree nut allergy so she’s been thrown into a world I know all about. Boobs, but I’d wait until I was totally done having kids.

Maid service, hands down. The thought of not having to clean for a year makes my heart flutter.

I cry a lot. It could have been anything. That’s why we watch movies at home… so I don’t embarrass my husband.

Nose and pinky toe, though neither was confirmed with actual x-ray because neither was out-of-place.

Wednesday Off The Wagon

Because we can’t be all good, all the time.

So this morning on my way to work I stopped for coffee… and a SlimJim: the breakfast of champions. As I spent the next 10 minutes trying to pry open the wrapper with my teeth, I imagined what the people in the bus sitting next to me in traffic must be thinking…

I’ve got a bad feeling about this. I’ve got a bad feeling about this.

That’s the sound of Taking Back Sunday blaring from my speakers. Post-baby, your car jam sessions are severely limited. I take opportunities when I get them, even if it means 6:45 am. After breaking a sweat and nearly sideswiping three vehicles, I decided to give up on the SlimJim until I got to work. Sigh.

You see, I try to eat healthy when I can. I try to cook dinners at home and make healthy decisions most of the time. But sometimes I just want to enjoy a plastic-wrapped, sodium stuffed piece of beef jerky, dang it! You’re with me right? It’s totally normal to dine on sensible lunches and then turn around and savor a quarter pounder with cheese. Totally normal.

p.s.- Imagine my mental state when I got to work, cut open my 'SlimJim' only to discover that I had accidentally grabbed some off-brand instead.  It was mildly nauseating and got tossed in the trash after one bite.  Barf.

Recipe- Meatloaf

Once in a while I'd like to post something other than PSA's, follow-me's, and disgusting bat stories.  How about a recipe?!?!  My husband and I love meatloaf.  I use a similar recipe to my moms with just a few small changes.  It's really simple and comes out fabulous, if I do say so myself :)

Before I get to the meatloaf I'd like to include a picture of Dominic squirting himself with a water bottle (this is what he was doing while I was cooking).  Reason being- I don't want a big bowl of ground beef to be diplayed as this post's picture on everyone's Dashboard.  Ba ha ha.

Now on to the food. 

You'll need:
-1.5 lbs ground beef
-1/2 of a green pepper, diced
-1/2 of a yellow onion, diced
-1/2 cup of Italian bread crumbs
- 2 Eggs
-Black pepper
-Red Pepper Flake
-Seasoned Salt
-Garlic Powder
-1 can of tomato sauce

*I actually like to prepare the meatloaf the night before so that when I come home from work I can just pop it in the oven, but for the sake of this recipe I'm going to pretend I did it all in one sitting.*

Step 1: Preheat oven to 400 degrees.  In a medium mixing bowl place 1.5 lbs ground beef

Step 2: Dice 1/2 of a green pepper AND 1/2 of a yellow onion

Step 3: Add green pepper, onion, 1/2 cup of Italian bread crumbs, and seasonings (salt, pepper, garlic powder, parsley) to taste.  Then add eggs.

Step 4: This is the messy part.  There's no way around it- you've got to get in there with your hands and mash it all together.  Really make sure you mix it well!

Step 5: Shape the giant meatball into a 'loaf', place in a casserole dish that has been sprayed with cooking spray. *This is where I would STOP and refrigerate overnight IF I was making this for the next day's dinner*  Cover with aluminum foil and place in preheated oven, bake for 30 minutes.

Step 6: Remove from oven, pour entire can of tomato sauce over the meatloaf.  Bake uncovered for an additional 15 minutes.

Step 7: Slice, use tomato sauce as a gravy, and Enjoy!

Extended Rear Facing

This is really a hot-button topic for me.  Rear facing is safest so we will rear face as long as possible.

For anyone interesting in learning more about extended rear-facing for toddlers, check out this article from AAP.  Spread the word to all of your mommy friends with young children- keep them 5x safer!

Measuring Messes

I know it’s not very green of me but I can’t help it. I’m considering inventing the first ever paper towel tool belt. I need them handy. Exhibit A: Toddler. Little messy toddler. Exhibit B: Dog. Big messy dog.

I swear to you I can look at a mess and figure how many paper towels it will take to clean it with pinpoint accuracy. Spit out fruit snack, yogurt drool, dropped spoon? Those are one towel jobs. Overturned applesauce? Two. Dominic insisting on feeding himself his mac-n-cheese… off his tray instead of from the bowl… with his fingers? Three paper towels: two wet, one dry. Splashing in the dog’s freshly filled water bowl? Four.. and one hand towel. Dominic feeding himself AND the dog spaghetti marinara? That’ll require a bath. (For Dominic, not the dog. The dog will require one wet paper towel.)

Aaaaaand for every 4+ paper towel mess, mommy requires 1 glass of wine ;) Just kidding! (sorta)

Florida Trip

I was lucky enough to get to spend a week in Orlando recently. Dominic and I went with a bunch of my husband’s family. Unfortunately, Hub wasn’t able to make this trip due to work. This was our second trip to Orlando without him.  BUT, that just means we’re really looking forward to getting to go again so we can experience it as a family. Even though Daddy wasn’t with us, we still had a really great time. We were there from the 3rd through the 10th of July. We had already visited Disney’s Magic Kingdom in October when we went down for Halloween, so we skipped that park this time. Instead, we did Animal Kingdom and SeaWorld this time.  Warning:  I took a ton of pictures and I'd like to share as many as possible... bear with me ;)

I know, I know.  Overload.  But seriously people, I had to restrain myself from posting about 100 more.  It was such an awesome trip!
